Medina Restaurant, a Michelin Recommended restaurant located in the heart of Mdina, is looking for a talented and motivated Sous Chef to support our Head Chef in delivering outstanding culinary experiences.
What You'll Do
As Sous Chef, you will play a key role in the daily operation of our kitchen by:
- Supporting the Head Chef in the day-to-day running of the kitchen.
- Leading designated kitchen sections during preparation and service.
- Preparing and presenting dishes to the highest standards with consistency and attention to detail.
- Supervising and mentoring junior kitchen team members.
- Maintaining excellent food safety, hygiene, and HACCP standards.
- Assisting with stock control, waste management, and ingredient quality.
- Supporting the preparation of staff meals.
- Contributing to private events, weddings, and special functions.
- Ensuring smooth and efficient kitchen operations during busy service periods.
What We're Looking For
The ideal candidate will have:
- A minimum of 2–4 years' experience in a professional kitchen.
- Previous experience in a high-end or fine dining restaurant (preferred).
- A recognised qualification in Culinary Arts (ITS Diploma or equivalent).
- A valid Maltese Food Handler Licence.
- Strong knowledge of food safety and HACCP procedures.
- Excellent organisational skills and the ability to perform under pressure.
- A positive attitude, strong work ethic, and passion for quality cuisine.
- The ability to lead by example and support the development of junior team members.
