Longueville Manor is the 1st and only 5 red star Hotel, with one Michelin key in the Channel Islands. It is situated a mile to the east of St. Helier, the capital of the Island of Jersey. The island is fringed with miles of sandy beaches and is frequently blessed with the longest hours of sunshine in the UK. Set in 17 acres of parkland, this 13th century Norman manor house has been lovingly restored and run as a hotel by the Lewis family for over 75 years.
Today, the hotel has 23 double rooms, 4 suites and a 2 bedroom cottage, with a 3AA rosette restaurant, which enjoys a strong local following as well as an international reputation and is the only Relais & Châteaux member in the Channel Islands.
As a Commis de Rang, your primary responsibility is to serve food to guests in a courteous, efficient, and professional manner, while supporting the Restaurant Manager and their team in delivering a seamless dining experience.
- Provide friendly, courteous, and efficient service at all times.
- Communicate guest feedback promptly to the Head Waiter or Restaurant Manager.
- Show enthusiasm for learning specific service areas, such as cheese or wine, to support your professional growth.
- Demonstrate a clear understanding of all menus and their components.
- Develop a basic knowledge of station procedures and service flow.
- Participate in restaurant cleaning duties as required, maintaining high hygiene standards.
- Stay informed about all hotel services and facilities to assist guests effectively.
- Strive to exceed guest expectations, ensuring their requests are met whenever reasonably possible.
- Complete all assigned tasks within the allocated time and to the company's expected standard.
- Assist with Room Service delivery, ensuring items are presented and served to the company’s standards.
- Ensure dishes are correctly transported to the restaurant and that the station remains clean and organised throughout service.
- Coordinate with the Chef de Rang to ensure mis-en-place and preparations are complete and up to standard.
- Support the Chef de Rang in preparing the station for service.
- Be familiar with the layout of all hotel rooms and the quickest access routes.
- Ensure trays delivered to rooms are checked by the Chef de Rang or Head Waiter prior to delivery.
- Address guests by name whenever possible to provide a personal touch.
- Maintain discretion and efficiency in all service interactions.
- Attend all required training sessions, briefings, and team meetings.
